Pokemon formes that appear on the maps are marked with the symbol. You cannot influence which specific forme of that pokemon appears. If a pokemon that appears with the symbol, looks the same as the normal forme, it is possible that it evolves into a different forme.

The Vivillon evolution tree is a special case. The forme/pattern of vivillon you get depends on when the Vivillon or its pre-evolution was caught. The forme available in the maps changes every hour. So all Scatterbugs/Spewpas/Vivillons caught during that hour will have the same pattern. The patterns also change day by day, so the pattern available today between 5 and 6pm won’t be the same as the ones that appear tomorrow during the same time period.
